Guilder’s 75

INGREDIENTS

  • 1 oz Green Tea Gin
  • 0.5 oz fresh lemon juice
  • 0.5 oz simple syrup
  • 3 oz sparkling wine

PREPARATION

Combine the gin, lemon juice, and simple syrup in a shaker with ice. Shake until chilled. Strain into a flute and top with sparkling wine. Garnish with lemon twist.

Guilder’s Martini

INGREDIENTS

  • 1.5 oz Green Tea Gin
  • 1 oz lemongrass infused noilly prat
  • 0.5 oz ginger liqueur

PREPARATION

Stir all ingredients with ice in a mixing glass. Pour into a martini glass and garnish with lemongrass stock and lemon peel.

Five Flower Tea

INGREDIENTS

  • 0.75 oz Red Oolong Gin
  • 0.75 oz sweet Japanese bermutto
  • 0.75 oz osmanthus jelly
  • 0.5 oz coffee amaro
  • 0.5 oz fernet branca

PREPARATION

Combine all ingredients in a kettle and heat to 66°C (150°F). Serve in a teacup.

Canton Club

INGREDIENTS

  • 2 oz Canton Dry Gin
  • 0.5 oz fresh lemon juice
  • 0.75 oz kumquat cordial
  • 0.25 oz bianco vermouth
  • 1 kumquat (muddled)
  • 3 drops of banana bergamot bitters

PREPARATION

Combine the gin, and all ingredients in a cocktail shaker; add ice cube and shake vigorously until the drink is sufficiently chilled. Strain into a chilled coupe and garnish with kumquat.

Soy Singapore Sling

INGREDIENTS

  • 1.5 oz Canton Dry Gin
  • 2 oz pineapple juice
  • 0.5 oz cherry heering liquer
  • 0.5 oz grenadine
  • 0.25 oz DOM Benedictine
  • 2 dashes of angostura
  • 1 oz clarified soy milk
  • 2 oz club soda

PREPARATION

Combine ingredients and let sit for 1.5 hours so the milk can curdle. Strain with a coffee filter. Pour remains back over curdles in coffee filter. Refrigerate.

Serve over ice in a highball glass and top it up with soda. Garnish with pina frond and cherry.

Matcha Fizz

INGREDIENTS

  • 2 oz Guilder’s Green Tea Gin
  • 1 oz matcha/heavy cream mix
  • 0.75 oz condensed milk
  • 0.25 oz lemon juice
  • 5 drops of mole bitters
  • 1 egg white
  • club soda

PREPARATION

Whisk the matcha with heavy cream until the mixture is thoroughly combined. Dry shake all ingredients together, then shake with ice for longer than usual to properly combine the egg white and cream.

Pour about 2 oz of club soda in glass, then strain contents over. Let settle and top with more club soda.
