Guilder’s Gin is the brainchild of Wan Di and James Park, two business owners who met when they both operated brick-and-mortar locations in the West Village.
The journey begins at the farms of our tea-masters. The quality of the leaves are determined by the harvest itself, so we partner with some of the top tea-masters in the world to ensure that only the best crops are used for our tea gins.
Many locals in Taitung would gather and harvest the tea leaves by hand. This is done as a way to guarantee quality, as the length of the tea stems are extremely important in determining the quality of the final product. Aunties from all over the village would gather and help each other’s farm and harvest them early in the mornings.
Within 48 hours of the harvest, our teas are roasted into a variety of different products, such as oolong teas, black teas, green teas, and yellow teas. Some of these teas are then taken into local tournaments. The rest are shipped to our own factory in New York.
Once the tea arrives in the USA, we begin the second roasting. This is a special process that we do to ensure that the tea leaves are completely compatible with the type of alcohol that we are trying to do. Because the tea leaves touches the alcohol in three different steps, we have to ensure that at each step the tea leaves are at their most optimal state.
The process of turning tournament-grade tea leaves into alcohol requires time and patience. Our team work tireless over months of production to ensure that each bottle is made with quality and care and ultimately, proudly reflects the tea leaves.
